Easy Leftovers Recipe: Pita Bread Personal Pizzas

I cannot take credit for this idea. The boyfriend’s family turned us on to this last weekend, and they read about it somewhere else. I’m just surprised I never came up with this on my own.

These pita pizzas are super simple, quick to make, and perfect for using up leftovers! The first time we did it we used leftover pasta sauce, Thanksgiving turkey, and veggies to make our pizzas.

This makes a quick lunch or dinner for 1, 2 or more. This is a great way to personalize pizzas for a group that make have different tastes.

We buy pitas really cheap from a Pakistani store near our home ($1 for 10 loaves!) and freeze them to keep them fresh. We just pull them out, top, and cook them.

On a side note: if you have leftover white sauce, you can easily make a white pizza. I love doing chicken, broccoli, garlic Alfredo pizzas. Mmm.

So here you go:

Ingredients

  • Pita bread
  • Pasta or tomato sauce
  • Shredded Mozzarella Cheese
  • Italian spices
  • Meat, vegetable, and other toppings

Preheat oven to 350F. (This could also be cooked in a toaster oven.)

Spread the sauce on the pita, and sprinkle on the cheese. Use more that one kind of cheese for more flavors or experiment with other types of cheese (we haven’t tried it yet, but heard goat cheese is fabulous on it).

Add your toppings. This is a great way to use up leftover meat and veggies. The boyfriend opted to use some of the peppers we froze from our garden.

Sprinkle it with your favorite Italian seasonings. We like using garlic powder, thyme, basil, and oregano.

Pop it in the oven for about 10 minutes. Frozen pitas may take a few minutes longer.
